Avocado Toast with Poached Egg

Avocado Toast

Ingredients:

  • 1 slice of whole grain bread
  • 1/2 ripe avocado
  • 1 egg
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions:

  1. Toast the bread until golden brown.
  2. Mash the avocado and spread it on the toast.
  3. Poach the egg in simmering water for about 3 minutes.
  4. Place the poached egg on top of the avocado toast.
  5. Season with salt, pepper, and red pepper flakes if desired.

Quinoa Salad with Roasted Vegetables

Quinoa Salad

Ingredients:

  • 1 cup quinoa
  • 2 cups mixed vegetables (bell peppers, zucchini, eggplant)
  • 2 tbsp olive oil
  • 1/4 cup feta cheese
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions:

  1. Cook quinoa according to package instructions.
  2. Chop vegetables and roast with olive oil at 400°F for 20 minutes.
  3. Mix cooked quinoa with roasted vegetables.
  4. Add crumbled feta cheese and lemon juice.
  5. Season with salt and pepper, and serve warm or cold.

Banana Oatmeal Smoothie

Banana Oatmeal Smoothie

Ingredients:

  • 1 ripe banana
  • 1/2 cup rolled oats
  • 1 cup almond milk
  • 1 tbsp honey
  • 1/2 tsp cinnamon
  • Ice cubes (optional)

Instructions:

  1. Add all ingredients to a blender.
  2. Blend until smooth and creamy.
  3. Add ice cubes if desired and blend again.
  4. Pour into a glass and enjoy!
