Avocado Toast with Poached Egg
Ingredients:
- 1 slice of whole grain bread
- 1/2 ripe avocado
- 1 egg
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions:
- Toast the bread until golden brown.
- Mash the avocado and spread it on the toast.
- Poach the egg in simmering water for about 3 minutes.
- Place the poached egg on top of the avocado toast.
- Season with salt, pepper, and red pepper flakes if desired.
Quinoa Salad with Roasted Vegetables
Ingredients:
- 1 cup quinoa
- 2 cups mixed vegetables (bell peppers, zucchini, eggplant)
- 2 tbsp olive oil
- 1/4 cup feta cheese
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions:
- Cook quinoa according to package instructions.
- Chop vegetables and roast with olive oil at 400°F for 20 minutes.
- Mix cooked quinoa with roasted vegetables.
- Add crumbled feta cheese and lemon juice.
- Season with salt and pepper, and serve warm or cold.
Banana Oatmeal Smoothie
Ingredients:
- 1 ripe banana
- 1/2 cup rolled oats
- 1 cup almond milk
- 1 tbsp honey
- 1/2 tsp cinnamon
- Ice cubes (optional)
Instructions:
- Add all ingredients to a blender.
- Blend until smooth and creamy.
- Add ice cubes if desired and blend again.
- Pour into a glass and enjoy!
